Look who's cookin....


So here is what I made for dinner tonight. It was so yummy, so I thought I would share it with you all. It tasted better than it looks in the pic. Try it! I put the recipe at the bottom so you can have it. Hope you are all doing well. Love you guys!!

1/2 c. butter (1 cube)
1/4 tsp. garlic, minced
2 c. whipping cream
1/2 tsp. black pepper
1 c. parmesan cheese (grated)
1 c. roasted red peppers (the kind in a jar)
red pepper flakes (to taste)
3-4 cups cheese or spinach tortellini (cooked)

Optional:
1/2 c. cooked spinach (for this, we bought fresh spinach and cooked it in about 2 Tbsp. of butter until dark green and soft... add to the sauce right before serving)
1 c. cooked chicken (for the one we made, we rubbed Montreal Seasoning on 2 boneless chicken breasts and baked at 400 degrees for about 40 minutes. Then sliced the chicken into strips)
OR
1 c. shrimp (sauteed in butter and garlic)

Melt a little of the butter in a medium saucepan and add the garlic. Saute on medium heat for about a minute, then add remaining butter, whipping cream, and pepper. Bring to a boil and add the parmesan cheese. Lower heat and simmer until the cheese is completely mixed in. Dice up the red peppers and add them to the sauce, continue to simmer. Serve over tortellini. Top with chicken, shrimp, or anything else you would like! (I think it would be good to add a few toasted pine-nuts and cooked asparagus.

Move over Martha Stewart...looks sooooo good. We'll be trying this recipe out soon.

I can't wait for the weather to cool so we can have soups and all the yummy winter comfort foods. I'm proud of you Lara for trying new things. Love you...
